Back on June 23 I posted a recipe for spring rolls — since then we’ve been eating them often, so tasty and healthy. We’ve tried many different varieties and have been dipping them in store bought sauce. I just found a recipe on Vegan Yack Attack (and tweaked it) for a spicy peanut sauce that is divine!

I played around with the ingredients a bit and made the peanut sauce even better, here is my version:
Mix 4 tablespoons coconut milk (original said light but not as creamy), 2 teaspoons Sriracha, 1 teaspoon Liquid Aminos (or soy sauce), 2 teaspoons lime juice, 4 teaspoons of sweet chili sauce, and 4 heaping tablespoons of creamy peanut butter (original only had a teaspoon). Microwave for one minute to melt the peanut butter and mix thoroughly — sweet with just enough bite to satisfy, dip away!
